I am an avid baker and I'm looking for a good egg substitute in cakes and things that isn't weird like pureed tofu. most recipes I've tried are weird. I'm not vegan but my mom is.
Apparently you can buy an egg-replacement product. However you should ensure that it is relevant to the recipe you are using. Just look for 'egg replacers' in your specialist 'free from' aisles in your supermarket.
I would imagine for something like bread, if you were just extremely careful with your portions of flour and water, and added the water slowly to match how much you needed, you should get away with it just fine =)
