There are lots of really cool things about water from a scientific point of view; without water life as we know it would be impossible. The absolutely coolest thing is: ice floats in it!

The coolest thing about water is that it is so versatile. It can be used to quench one's thirst, for cleaning (as has been mentioned in this thread more than once), for cooling, for heating, preparing food, and many other uses which I haven't mentioned.
