What I would do would basically just clean as best you can down there. Get a bulb syringe, wash yourself out from the inside by holding in lukewarm water and gently expelling until the water runs clear. I wouldn't try to clean too much because you might irritate your bum and it could actually make things unpleasant during sex.
I would probably clean an hour before, but it's not an exact science, so it really depends on how your metabolism is. It also gives your body time to reabsorb the excess water so you won't have a puddly mess because water hides in mysterious places, lol.
I wouldn't change my diet, it might upset your stomach if you'll eat something your system isn't used to (i.e. tons of fiber). At the same time, try not to starve yourself! Eat less than you would just so there would be less crap to worry about, and you won't feel as paranoid about accidents.
I know people who make a few days to a week long regimen for sex. I used to do that. Sex is fun. Try not to over-think or over-do it or else you won't enjoy it. Also, if you have a good diet anyway, you have more opportunities to enjoy spontaneous anal sex, which is the best.
