I think it depends on the moment you're in when you do it. I think there's a small market for it, but largely it isn't something a lot of people find sexy or freaky. I've described why I can tolerate it in small amounts in certain scenes and why I like doing it with my lover, but I don't like it when it's overused. If it's simply putting some spit on your dick and letting someone suck it off or a top spitting on a nice asshole before rimming it I find that sexy but spitting in an open mouth is just too much

I think snowballing can be hot as well, but I only like to see it every now and then in a porn scene. As someone who actually is into spitting, I will try to answer your question.
1. Spitting expresses disrespect. Harbouring less respect for your partner during sex, than you would otherwise, removes a lot of inhibitions. It makes it easier to perform certain actions that you would otherwise hesitate to perform. Very useful if you're into S/M.
2. Spitting signifies dominance (or helps establishing it, if the partners' respective roles aren't pre-defined).
3. Saliva has certain intrinsic properties that directly appeal to primal sexual functions of the brain. It contains pheromones, it's slimy (reminiscent of pre-), it lubricates.
4. It conveys intimacy of a level similar to a blowjob or rimjob, while being less risky than those. Lower bacterial count than whatever you ingest when licking a guy's arsehole; lower viral count than eating a guy's . Also, it has a milder taste (practically tastes like nothing at all).

By the way, I can't confirm that at all. I specifically look out for scenes that contain spitting, and while I only browse categories that are more likely to contain it, I still only find it in about 5% of productions.
I guess you're either browsing the wrong categories for your taste, or you're simply experiencing a psychological phenomenen known as Confirmation Bias.
