sounds interesting. Searched a bit and found this recipe:
Argentinian "potato bombs."
These have meat in them, but you could make them just of potatoes or with cheese.
Preparation time: 1 hr. Cooking time: 15 min.
Ingredients
Use existing recipes to make:
stiff mashed potatoes (real or instant, seasoned with salt)
picadillo argentino
----------------
shredded cheese of your choice (mozzarella is good)
2 eggs, beaten with a little salt and pepper in a small bowl
1-2 cups of bread crumbs
oil for frying
Method
On a piece of plastic wrap, spread a circle of mashed potatoes into a disk about 4 inches across and a little less than 1/2 inch thick.
Put approximately a tablespoon of picadillo in the center.
Top with a little cheese.
Wrap the plastic together to make a potato ball with the meat and cheese inside. The ball should be a little larger than a golf ball, elongated and a little flattened. Put balls on a plate or piece of wax paper.
Continue making potato balls until you've used up all the ingredients. If there is leftover potato, you can make potato & cheese balls without meat.
In a small bowl, beat two eggs, salt and pepper with a fork until blended.
Put about 1 cup of bread crumbs into another small bowl.
Quickly coat each potato ball with the egg mixture and then coat it in bread crumbs.
Heat about 1/2 inch of oil in a large frying pan over medium-high heat.
Fry potato balls on each side until golden.
Drain on paper towels and serve hot.
