ketchup or bbq(or other tomato based sauce) in the US, mayo in Japan or Belgium though sometimes I go funky with a Thai inspired peanut sauce. Horseradish in mayo also is a nice variation

Mayonaise doesn't enhance the flavor of french fries for me at all. Similarly, I have no idea why people eat fried mozzarella cheese sticks with marinara sauce. IMO, spicy mustard is a much tastier choice.

I've always like cocktail sauce with fries.

I've seen people mix mayonnaise and ketchup ... *shudder*. I prefer barbecue sauce, but if I had to choose between mayo or ketchup, definitely ketchup.
